Boxing Day Buffet Ideas

Hi Ive tried searching for good yummy cheap buffet ideas but cant find anything does anyone have any ideas for a buffet? We are having hubby's sisters family over who it has to be said will be down all day contribute nothing apart from 8 beers and wont think about offering anything either as they never do! :mad:

I dont really want to do the frozen buffet deals from tesco etc as the last time I used them I didnt feel quality matched price.

  • Stuffed potato skins - bake potato then cut in half, scoop out potato and mash with butter and a little grated cheese, spoon back in skins and top with cheese and any other topping of your choice ie onion,bacon (can be made in advance and frozen) when ready to serve bake in oven
    4 spuds makes 8 yummy potato skins

    chicken sticks - cube chicken breasts and spray with a little oil and sprinkle with spices (i like tescos garlic lovers grinder) stick a cocktail stick in each cube and bake.

    nachos with salsa and cheese on top then baked in the oven.

    left over turkey and stuffing open top barms - get some large barm cakes (breadrolls)cut in half butter and smear with left over stuffing and leftover turkey.

    bread pizza fingers - smear bread with tomato pur!e, cheese and topping of your choice once cooked cut into slices.
    Avid freecycler (Received Dishwasher, Cooker, 0ver, fridge, freezer and Bathroom suit)

    I usually do a buffet for christmas afternoon and 2 faves of ours are brushetta - french bread stick sliced diagonally. heat a few chopped tomatoes and add whatever you like, sprinkle with a bit of parmesan cheese and grill.
    also filo pastry things ( i dont know that they have a name) shop bought filo pastry cut into squares - use a muffin tray and add 2 filo squares to each hole. fill with tomato pesto top with a few cherry tomato halves, bit of cheese and bake.yum and you get loads from 1 pack of pastry :T
  • Turkey and ham pie made with chopped up leftovers from Christmas Day, including any cooked and uneaten veg and a tin of campbells condensed chicken soup as a sauce - put meat and veg in a pie dish and mix in soup then top with a puff pastry lid and bake. Easy peasy.

    Chicken drumsticks/wings? The meat is cheap and you can get all sorts of marinades- there's a really good jerk one at tesco, although it isn't very christmasy

    Nigella did a spare rib dish for a buffet , last night on tv.
    marinade contained a Clementine , looked very good and foolproof

    Then why are we trying to help . Better if we gave duff ideas , next year you might be spared them.

    I grew up having a boxing day salad and have carried on the tradition, it's great because it's cheap and everyone gets something that they like.

    Leftover turkey
    Cold meats (ham, gammon, cocktail sausages etc)
    Pork pie
    Sausage rolls
    Mash
    Lettuce, tomatoes, spring onions etc
    Potato salad
    Homemade coleslaw
    Sweetcorn
    Pickles
    Cheese

    So easy to do too and most of the things are either leftovers or cupboard staples.

    We do that in our family too, but have jacket potatoes, not mash. And warm mince pies with lashings of cream for dessert. :D

    i know you said you didnt like the tesco platters last year. we usually get the iceland platters (just easier when we've already cooked a full lunch!) and they were quite nice - and they do all different cuisines, and fairly cheap too

    We do cold turkey, roasties, cold stuffing, cold pigs in blankets, chinese/indian selection, cheeseboard, and trifle.
  • Coronation turkey/chicken is my favourite.
