    Quite honestly fay, if it's been open weeks and you had to pick the mould out, then remember the old adage " if in doubt, chuck it out" you obviously weren't that keen to start with, and I am sure you don't want to put yourself and others at risk for a few pence worth of dodgy tinned fruit.

    I'm not really in doubt ;) there was only a tiny bit of mould. But perhaps it's time to use it quickly... or if possible, cook it rather than eat it cold :)
    Think I'll grab some almonds tomorrow and see what I can whip up in the way of Bakewells :) And I do have some uninspiring chicken breasts in the fridge at the moment.

    I realise you have lots of nice ideas there, but I think I would use it in the middle of a flapjack mixture to make apricoty oaty sqaures to have with a nice hot cup of tea after being out in all that snow ;)

    Add a good dollop to curry sauce for a fruity sweeter curry.

    Mix a dollop with half mayonnaise/half natural yogurt and curry paste with cooked chicken to make Coronation chicken.

    Pour some into a dish and top with sponge mixture and bake to make a jam sponge pudding or make jam tarts or use as a filling for pancakes.

    You could bung it in with some cooking apples to make a fruity crumble, which will freeze well.

    Tbh, it will probably freeze ok as it is, if you can't decide/don't have time.

    lots of great ideas, could you not even use it as some sort of glaze for pork or ham

    Thank you all :) The chicken idea helped me find this http://allrecipes.co.uk/recipe/756/apricot-chicken.aspx which required a large quantity of the exact same compote I had ;) A little uninteresting re: seasoning so I stuck in some cumin. Could have left the extra sugar out I think. Perhaps not one to repeat but was ridiculously simple... and no complaints were heard!

    We're also munching our way through a tray of bakewell squares made with what was left.

    Result all round, and I'm glad not to have wasted it :)
