cat5 cable question

I want to cut the end off a normal cat 5 patch lead and put a socket on the end instead of the standard plug. I already have a socket which has terminal blocks on the back in 4 pairs of 2. Do I just connect the cables from the cut off end to the same colour on the socket or do I have to change the colours as the other end has already a plug on. Hope this makes sense, I tried googling but didn't find an answer.

The cable will need to be 'straight through', 1-1, 2-2 etc, so you are correct in using the same colours. Just be careful as there are two standards for colour coding, A and B - most use B, but sockets sometimes have both marked.0

Do you actually need a socket? If you just want to connect two cables end-to-end, you can buy very compact socket-to-socket connectors which are very discrete, and would save the aggravation of having to re-terminate.0

I just got 4 colours (plus whites) I just noticed there is a number on here 568B. If it's wrong will it just not work? I've got a face plate so can plug a cable in to the socket mounted remotely from the router. Saves me having to open the cupboard and have a wire trailing.

The numbers refer to a telecommunications standard, you should be able to find more information about this on wiki.
As long as both end of the cable are wired the same way then it should work correctly. You will not need to do any fancy thinking, wire them based on the colours you can see.
Have you got a telecomms press down tool? I tried to wire a few sockets in my house without one and it was a disaster so I would advise you have one of these before chopping cables.0
