 I keep noticing that people on here add links to sites, but the word on the link isn't the site name. For example, someone might say click Here, and when you do so you would be taken to another site, say bbc.co.uk. But the link is somehow stored under the word "Here". How is this done?

If the forum supports vB code, use the basic editor method (see post 2), i.e. type/copy/paste manually.biddy79uk wrote:ahh, but what if you wanted to do this on another site

If the forum does not support vbcode (or bbcode) - then you may want to try HTML:
[HTML]
<a href="http://www.google.com"> Click here to go to google </a>
[/HTML]
will give you:
Click here to go to google

Having said that, very few boards allow you to use HTML now-a-days, as it can be misused by those dastardly spam peoples!0
