ceramic knives any clues

Has anyone used a cermaic knife before

im looking at getting a super sharp knife i had my eyes set on a GLOBAL santoku knife roughly about £90 but have seen some kyocera ceramic ones either black or white

they are similarly priced but was wondering if anyone has seen a draw back of the ceramic one apparently they shatter if dropped

i also heard that it wont brown fruit and lettuce as easily as a stainless knife.

  • I have a couple of ceramic knives, bought from Aldi for around a tenner each.

    They are very nice to use, the only slight downside is they cannot hang off my magnetic knife rack. Not a big problem for me.
  • ceramic knives can also shatter very easily, so don't drop them!

    The G48 - 18cm is about £65 on Amazon.
  • I have a full set of Global Knives, as attractive as they are, they are also a pain. They cannot go in a dishwasher and do indeed smash on tile floors. I won't be replacing them with another set :(
  • i will hardly use it i just want a super sharp knife for tomatos and general chopping stuff

    i had a look on amazon theres some real bargins on there

    you need to treat them well, nice wooden chopping boards etc. i would recommend having a try of one before parting with the cash, the weighting is different to a normal knife so you might not like it, you could probably just get a good ss knife and keep it sharp for your needs...

  • i used to use global ones in a resturant i worked in when i was about 14 and they had sand filled handles for optimum weighting. I guess the ceramic ones are much lighter but they are black and look cool

    yeah, the global ones are the dogs! if you've used them before, i'd say go for it, just as long as you're not clumsy... and never try to catch one just after dropping it - done that before :'(
    the cheaper ones i've seen don't seem to be as nicely weighted, but guess it's the same with every knife and not just ceramics...

    I finally got around to buying some decent knives recently as a christening present for our new kitchen. I'd been lusting after a set of Global knives for years but when it came down to it, I just didn't like the feel. The hollow handles didn't quite have the 'heft' that I was looking for.

    I was trying to find some Furi knives but couldn't find a stockist where I could try them out. In the end, I bought a small set of Wusthof Classic knives and I'm really pleased with them. However, I was still after a nice Santoku general-purpose Japanese knife. Luckily, last week was the BBC Good Food show at the NEC and I got to try some out.

    After trying virtually every knife at the show, I settled on a 170mm Suminagashi Santoku knife from Kin (I can't post a link, but Google "kinknives"). It cost almost as much as the Wusthof set, but it's a thing of beauty.

    A guy on the Japanese Knife Company stand showed me how to hone one using the black print on a newspaper!
