What happened to my Gypsy tart....

I followed the recipe to a tee.... Heres a couple of pictures - its almost as if the sugar and milk seperated :undecided still taste good though:D

    silly question but what was the recipe

    did you use evaporated milk and brown sugar as it looks very pale to me??

    yep - 400g evaporated milk and 350g muscavdo sugar. when i whisked it together it wasnt pale....
    did she go back to the campsite?

    I can't help but if it tastes good (and it looks like it would taste great) you could change it's name - sweet milk tart with caramel sauce - and pretend it's supposed to be like that - who would know?! If you used a spoon to swirl flicky bits of the liquid around the plate it would look all cheffy as well!

    Did it need longer and slower cooking to firm up?

    i made two as there was so much mixture! the first was in the oven for 10mins at 200. the second one was in for about 15mins at 170

    Well I have to admit I have no idea what gypsy tart is but it didn't stop me putting in my tuppence worth...lol

    I know when I made an egg custard once I had a similar problem when I made the next I turned down the oven and cooked it slowly and it was set perfectly.

    did you leave it to cool completely before cutting it? I've made a few gypsy tarts in my time and realised that, when I was a bit too eager to try my creation, it did this. When I had a bit more self-restraint (rare!) and had left it to cool right off, it seemed ok.

    it felt cool... will cut the second one and see

    ETA this is the second one which i have only just cut...

    seems a bit better than the first? perhaps leaving it that little bit longer to set helped?
