Evernote : a filing system

Hi,
I am absolutely hopeless as filing documents away somewhere i can find them again. I try to start filing systems but always end up piling them till they become an un-usable mess then once every six months to a year i do a big purge and chuck most of it out only to find i need something a few months later.
I already use Evernote for jotting things down, keeping lists etc. My plan was to scan documents as PDFs as they come through the door, tag them accordingly then shred the original. Thus having everything filed in an organised manor and getting rid of the clutter.
But i got thinking about car insurance documents etc. If needed, would a home printed copy from a scan of the original be sufficient?
Are there any documents that only the original could be considered the only legal copy?

Birth Certificate
Driving Licence
MOT
Vehicle Registration Document
Vehicle Insurance Document (depending on provider)
Other insurance certificates
Gas safety certificate
Legal documents and letters from solictors etc.
Probably loads more. Just get a ring binder and sleeves.0 -

Basically no legal use of a document applies to copies .
Car Insurance as an example if you lose your original and hand in a copy to the police if required it will not be acceptable as anybody can fake a copy .
Nothing to stop you keeping a reference copy of docs on your computer and the genuine ones in a safe place .
