Undermounted sink query,,

Plans are coming together for our kitchen and we have decided to go for an undermount sink in the quartz worktop. (Not MSE I Know!) Anyway, knowing that the hole is cut and polished to the sink, im now worried about which sink to buy, as it will have to last, as any replacement may not fit the cut and polished hole!
Any recommendations about which to go for..Franke, Reginox, Bluci,Caple?...Ive got kitchen fatigue, they all look the same, but about £100 difference in price! Any makes you would avoid as they are really thin, difficult to fit, poor quality?
Should I be looking for a minimum guage or thickness? What does '18/10 Stainless steel' mean? Is it good quality? I want to try and claw some money back on the project, but unsure if its folly to go for a cheap sink.

18/10 stainless steel is a very common ss standard.
18% chrome and 10% nickel.Get some gorm.0 -
