Agreeing completion date when renting - help!

I do sympathise though - it's berlumming irritating - we're in a very similar boat in that our next rent date where we want to give notice (we're quite happy to overlap a decent couple of weeks because of DIY we need to do that it's easier to before we move in) is looming large and our contract has been in the post for over a week (I'm suspecting the post has a large triangular shaped area somewhere over Bermuda by this point). We're basically resigned because of vendor's solicitors pratting about a bit to having to cover rent AND mortgage for the December rent bill (Bank of Mum and Dad creeping in here since my car ate a chunk of savings the other week), and having nearly a month of having the two properties running concurrently - which sort of works for us in terms of a leisurely move - but is more expense than we'd hoped for really (like you - a week or two would have been more ideal).
We also HAVE to be in for the week or so before Christmas - we're moving ourselves, relying on family to help with decorating/DIY (since my husband's an accident zone with anything more risky than a spoon) and FIL gets sent back off overseas mid-December... bit of a different motivator to the generally accepted one there.

Explain your situation to your solicitor and the EA to explain what the implications are due renting you have to wait another month. The main losers will be you in unnecessary rent and mortgage completing tooearly. As first timers you hold the strings, if they want an early move , one suggestion would be all 3 parties fund the excess rent costs...would be a fair way to do it as if you complete just before xmas, it would only be a couple of hundred each. Most sellers would agree if it proceeded the move earlier. otherwise bear the costs yourselves and be the losers or stand your ground.0

Turst me on this one you probably want more of an overlap than 1 week, there are lots of things that can go wrong. If you haven't damaged your rental you will be getting your deposit back. Also Rent is paid in advance, mortgage in arrears if that is any help.0
