Boiler/Radiator query

The trouble is the rooms in my home are quite big with high ceilings and it is never too warm! If I turn the room thermostat down on the landing, could I turn the thermostat that's on the boiler up a bit? It's currently about halfway on it's circle (baxi combi).

Is that the CH control on the boiler, or the DHW? if the former, try 2/3rds of the way round.

Currently it is set at about "4 o'clock"

Can't really ID from that, but the DHW control often has an image of a tap on it, the CH control an image of a rad. As I said, try it on 2/3rds and see how you get on.

So should I turn the stat on the landing down and the stat on the boiler up?

Yes, try it and see.

You need to set your ch stat on the boiler to about the 6 o'clock position, maybe even 7 o'clock.

Keeping this stat too low will cost you more money in wasted gas than turning it up.

If it is too low the rads will not get hot enough, so the boiler will be running all day and never heating the rads up enough to warm the rooms properly, therefore not letting the external controls shut off.

The external controls shutting off is what save you money on your gas bill.
