What about patties?! Think of them as extra tasty spicy pasties. You can cook a load on the wednesday and keep them in the fridge or freezer(oven/micro to heat up) until friday. You could do some beef and some veg, and like the chicken pieces idea you can just chuck them all on a big plate and people can just grab one.

One dish that might work is kidney beans with thyme and coconut - sounds strange but is wonderful.

You could cook the kidney beans until almost done earlier and then heat them up on the night. Drain, add loads of thyme leaves and creamed coconut - chop that in advance.
If you've have not made a mistake, you've made nothing

I would not, which is why I suggest cooking them in advance. I find tinned beans too soft and pulpy for this dish.

It does sound strange, very strange and you need say a couple of tsps at least of thyme for enough beans for 4. I found it it in a Times cookbook about 30 years ago and it is really good.

Can you get caribbean food easily?
You could do fried plantain as an accompaniment.
You could make a dish from salted cod, onions, cabbage. It is quite quick to make as you can prepare all the ingredients before hand, and just saute them on the day, as you would with a stir fry.
lamb curry can be made in the slow cooker. You can prepare it and marinate on wednesday.
I agree about cooking the rice on fri.

    PM me if you like,
especialy if you want a handmade tam complete with dreadlocks made from wool....
    Loving the sunny days!

    Rum Punch:
    1/2 cup icecubes
one & a half fl oz rum (light or dark)
    1/2 fl oz Triple Sec
    2 dashes Angostura bitters
    juice 1/2 lime
    2 dashes grenadine
    2 fl oz each of:
    orange juice
    pineapple juice
    guava juice

Shake ingredients together vigorously until thoroughly chilled. garnish with a slice of lime, maraschino cherry and grated nutmeg.

If this isn't alcoholic enough, I also have a recipe for Reggae Revenge!
If I'm over the hill, where was the top?
