bread maker - sugar query

I made some bread yesterday in the breadmaker using my own ingredients and not a ready made packet if you know what I mean.
Somehow i glanced a a receipe and then just bunged ingredienst in and forgot the sugar -
It all rose well and came out ok so was just wondering what the sugar is for??

afaik The sugar is to encourage the yeast along. It should rise more if there's sugar added.My Doctor told me that "1 out of 3 people who start smoking will eventually die." The other two apparently became immortal.

I've found breadmaker recipes often seem to be too sweet - I've always reduced the sugar quantity by half or more & it's never made any difference. Think it does need some though.0

I never bother with the sugar because I prefer close-textured bread. All bread machine recipes can benefit from a bit of cautious tweaking of quantities.0

The sugar is needed to activate the yeast as is the salt and water,this is why the yeast is added last.From what I can remember when using fresh yeast we used warm water,sugar and salt in a jug with the yeast and left it covered to ferment.Things are much simpler now with dried yeast,but the sugar is still important.Does that make sense to anyone,just read it through and it looks gobbledeegook to me!Debt at highest £102k :eek:

I'd better point out I was talking about recipes using breadmaker yeast.
The old 'active' dried yeast does still need sugar to get it going, as you say l.i.h.0 -
thanks guys - the bread is quite close knit so will try my best to remember the sugar!!
Can anyone point me in the rught direction of the receipe thread for breadmakers - for sundried tomato bread etc? have tried search but it keeps confusing me???Lightbulb moment 10-06-06

I think most people adapt the recipes to their own taste. Personally I use some sugar and a bit of unsalted butter but I don't use any salt. The bread and bread cakes I make taste fine.Lose weight by eating less salt! - Go on! - Try it! - It works!0
