    Another way to 'turn' milk is to use a small amount of vinegar....if you have not got lemon juice, yoghurt, sour milk or buttermilk! I have made soda scones with just full cream milk and they have turned out fine.

    Yep definitely milk with lemon juice works.I bake a wheaten loaf every day which calls for buttermilk and milk with a good squirt of lemon juice does the trick.Yum
  • Just a point on this.

    Don't replace it with plain milk.

    The buttermilk is acidic, and that acidity is needed as part of the chemical leavening reaction.

    Recipes which call for buttermilk usually also call for bicarb and baking powder. Bicarb is alkaline, baking powder is a 1:2 mix of bicarb and cream of tartar (tartaric acid). The acidity in the buttermilk is the final balance to the mix.

    Chemically the reason for this is first year science. Acid plus base (alkali, broadly) give salt, plus water. The water is heated to evaporate as steam, and lo... light fluffy holes in your baked goods...
