mushrooms in cream sauce

Hi, whenever I go out for a meal I always look for mushrooms in a cream sauce normally served on some crostini or something. What I want is a recipe for the sauce, it doesn't taste mushroomy, hope someone knows what I mean!!

  • I'm not sure about an actual recipe for the sauce, but what I would do is fry the mushrooms gently in some olive oil with some garlic and then when they are done, add some cream (single or double). Boil this gently for a minute or so to reduce, and you could also add a half glass or so of white wine to the mushrooms before the cream and boil off for a minute or two. If you had some to hand, some fresh parsley or tarragon could be added at the end. You could also use creme fraiche instead of cream. HTH.

That's very similar to the way I do them and it's lovely. Bargainbasement, there are some more ideas on this older thread: Garlic mushrooms

I lightly fry the mushies, then add single cream, a smidge of garlic, and sprinkle of parsley when served. I like it on granary toast.

If there's a wee drop of scotch knocking about, I boil that first, then add the mushies and cream to it.
I ave a dodgy H, so sometimes I will sound dead common, on occasion dead stupid and rarely, pig ignorant. Sometimes I may be these things, but I will always blame it on my dodgy H.

Sorry, I'm a bit of a grumble weed today, no offence intended ... well it might be, but I'll be sorry.

    Hi all,

I've got some Quorn Mushroom and Garlic fillets (in breadcrumbs I think) that I'd like to use, though the Quorn sausages tend to be on the dry side (unless SC'd). I have a small can of mushroom condensed soup at home - what do I need to do with it in order to make a small amount of sauce with the fillets (only for me and OH)??

    Thanks

    C xx
  • It can be used straight out of the can, jsut heat and pour over. I have casseroled pork chops in it before and jsut pour over. You can milk or water it down if you want a thinner sauce but you don't have to.

You could add mayonaise (about half a cup), grated cheese (half a cup plus another half to sprinkle on top if you want to bake it after) and a splash of lemon juice :) I make this all the time and its scrummy :)

Have to say my fave mushroom pasta sauce thingy is just finely chopped mushrooms and onions sauteed gently with olive oil and lots of garlic till soft then tossed into pasta. If I've got any cream or creme fraich I sometime chuck that in at the end. I know these are pretty simple but sometimes I think that's all you need, specially if you serve the pasta with a nice green salad and crusty bread and a really cold glass of white wine :D
    Hope that helps,
    Jess
