I would not bother cutting the meat off the rabbit, just joint it and bung it in the casserole bones 'n' all. One rabbit thus cooked is enough for DH , myself and the 2 DS's (dd will not eat 'real' meat anyway - last week managed to get her to eat a HM chicken nugget ...progress)
DOnt worry about what they look like either they do not look like a 'bunny' when they are skinned, just as a cow is not that recognisable in carcas state.

What does it taste like ( is it like chicken ? )
i can get it from the butchers for £2 for one, how far will that stretch ?
It is actually in the shape of the rabbit still, can i get the butcher to chop it up for me or do i have to disect it myself _pale_

Rabbit tastes like rabbit
it is a bit like chicken. If you like chicken you'll like rabbit I think. If it is a wild rabbit then it will taste gamey which is difficult to describe if you haven't had it before.
I make one stretch to 5 (2 adults and 3 kids) but that's because the 2 youngest aren't very keen on it. I generally casserole rabbit with herbs and wine/cider. Veg like carrots, onions and leek are good in the casserole.
The butcher will cut it up for you if you ask, but it is quite easy to do it yourself provided you have a good sharp knife. They sometimes come with the heart, liver and kidneys. You can eat these in your casserole if you like. I always save the liver for a pilaff or risotto.
£2 is a very good price, buy lots and freeze;)
I should add that rabbit has lots of little bones which children sometimes find off-putting, and there might be shot in it too.0 -
It's the day for game! When DH brings me a rabbit, he prepares it and joints it. He then makes a casserole with root vegetables. We have it with mash and fresh green veg.
Rabbits are more meaty than a chicken - ours serve 4 easily.

My Mums neighbours children have been eating Rabbit caserol under the guise of being chicken for years.
I'm lucky too. I get my rabbit/hare jointed all ready. Its the pheasants and the river ducks I get in one piece and have to do myself._pale_

Rabbits vary in size considerably but are worth buying. The price will vary depending on where you live. We are lucky enough to live in the sticks and our neighbours' son shots us the odd rabbit.
Rabbit is best caseroled as it is VERY lean. It is considered to be a very healthy meat as it is so low in fat. It tastes like very strong chicken???
Our favourite dish is as follows
2 rabbits or 1 large one jointed dusted in seasoned flour (2 oz ish) fried in oil or butter for 5 mins. Stick in dish, fry 6 rashers of bacon chopped and 2 onions. Add to the dish with 3 chopped carrots. Make a sauce with leftover flour and 1 litre chicken stock and a glass of red wine. Add to the dish, add 4oz of halved dried apricots and a bit of rosemary and cook (ideally in a slow cooker) The apricots really go well with the rabbit.
The recipe I seem to remember was out of some Australian cook book??

I like rabbit, OH has made rabbit curry which was tasty, involved a lot of bones tho! I have also had rabbit cooked with (i think) onions, cream and grainy mustard - that was delicious!!
Rabbit pie is traditional, I know that a lot of people use 1/2 and 1/2 rabbit and other meat - maybe stewing steak, Im not sure. (delias has bacon in it)
I find that sometimes when you are cooking rabbit it smells a bit like grass - presumably cos thats what its been eating - its probably far healthier than farmed meat!
Its very low in fat too!0 -

My fave things to go in rabbit stew are: chorizo, white beans, peppers, paprika, tomatos, chicken stock, bit of wine, plenty of garlic.
Definitely cook it for quite a while! It has plenty of flacvour and a firm texture.0 -

Thanks for all of your replies, I only work part time and this is the works computer so i have only just read everything from over the weekend.
i may give rabbit a go then, just another quick question, when you say that there are a few little bones do you mean actually in the meat when you are eating it or when you are chopping it up ?
My OH is not good with bones, if there is one on his plate he will Gag let alone find one in his food. _pale_0
