Can anyone recommend a good vegetable cookbook?

I second Seraphina's recommendation for Madhur Jaffrey's World Vegetarian! It's one of the most frequently used cookbooks in my house - and neither of us are vegetarians.0

Have you checked out your local library, Ceridwen? And the charity shops near where you live?
Last weekend, I got 'Make More of Vegetables' by Janet Warren (St.Michael Cookery Library - dated 1981) from a local charity shop and 'Appetisers, Soups and Entress' by Jean Bowring (1978) - cost me all of 50p each :j. OK, they're NOT the most up-to-date books BUT veggies don't change.

I copy out recipes that I like the look of, save them to my comp, print out and put into plastic pockets in a folder/binder (splashproof for when cooking!). Then return the books to a different charity shop - to keep them circulating and earning money for the various organisations.0 -
