Good Foods 101 Veggie Dishes is a good one and only about £4.99, I bought my son Beyond Baked Beans Green: Real Veggie Food for Students by Fiiona Beckett when he went to uni that has proved most usefull, not just for students, has some very good recipes in0

We really like 'The Vegetarian Student Cookbook' from Hamlyn.

I quite like 'Learning to cook vegetarian' by Rose Elliot
The recipes that I've tried seem pretty straightforward and even I can follow them (I'm generally not very good with recipes)

The Delia Vegetarian Collection is fantastic! And only 10 pound or so in Asda at the moment! Not bad for a cookbook!

I like the Sarah Brown ones. Another vote for Cranks and Rose Elliot too, her Mother and baby book when I had my kids in the 80s was invaluable.0

another vote for Delia here. MyDH got me it for Christmas a few years ago and it is fairly splattered now showing lots of use! Particularly good for cooking for friends I find
