Hi Lovelies
I always buy sweet potatoes and always end up with them going off before we get chance to eat them. I was thinking of baking them and then freezing them and taking them out of the freezer for lunches as and when I want them. So the question is can I freeze them once they're baked?

I have 2 jacket spuds that we won't eat tonight, cooked in oven, i have recently seen frozen jackets in Iceland so assume they are ok to freeze just checking though! Should I cut them open first or just wrap them and bung in freezer? TIA x0

I like to cut them in half, scoop the potato out and mix it with grated cheese, chopped up onion and a knob of butter. Fill the empty skins with the mixture and freeze
When we want to eat them I just defrost them and pop them in the oven to warm up - yummy0 -

If you Google "Twice baked potatoes" you'll get plenty of ideas.0
