    I have tried this but you just don't get that good oven baked taste.

    So by cooking them all up in one go, you are saving electricity and won't end up throwing out old potatoes :)

  • Hi Lovelies

    I always buy sweet potatoes and always end up with them going off before we get chance to eat them. I was thinking of baking them and then freezing them and taking them out of the freezer for lunches as and when I want them. So the question is can I freeze them once they're baked?

  • I have 2 jacket spuds that we won't eat tonight, cooked in oven, i have recently seen frozen jackets in Iceland so assume they are ok to freeze just checking though! Should I cut them open first or just wrap them and bung in freezer? TIA x
  • I like to cut them in half, scoop the potato out and mix it with grated cheese, chopped up onion and a knob of butter. Fill the empty skins with the mixture and freeze

    When we want to eat them I just defrost them and pop them in the oven to warm up - yummy

    Cut, mash (add whatever you fancy), open freeze, then wrap :)

    If you Google "Twice baked potatoes" you'll get plenty of ideas.
