Help! Sponge cake Filling Disaster!

I have made a chocolate sponge for a coffee morning tomorrow, just tried to fill it with HM apricot jam & it ran off it really fast....not a problem thinks I, I add the little bit of icing sugar that I have to thicken it up. Now it's got little white lumps in it ('cos I didn't sift it:o:doh:) and it's still running off the cake:wall: I haven't got any more icing sugar except for a table spoon full for dusting, I have pelanty more jam including different ones, and the bottom layer of the sponge is very sticky & soggy due to the jam!:sad: To cap it all my SiL has just rung & invitied herself over tomorrow so I'm going to have to cut it in half & keep some back for her visit. I really need to save it....what do I do?_pale_

Dare I suggest you make another one, and devise a way of turning the first one into a dessert - use it as a trifle base or something. (On a sewing list that I belong to we don't talk about "mistakes" but "design opportunities")0

Lack of time & ingredients forbids starting over....don't think I didn't consider it as my first option!

Call it a drizzle cake? I'm sorry, but I really can't think of any way to rescue it as a cake.

What about pureeing the jam to absorb the sugar and then heating it through with some cornflour or arrowroot to thicken it. Once it is cold it should be thicker and maintain its place on the cake.0

idiot question : how do I puree jam?:o Other than that, sounds liek a possability?

Just whizz the jam through a food processor or blender. This will break up the icing sugar and incorporate it into the jam. Blend some cold pureed jam with cornflour or arrowroot and then warm it all through with the blended bit as well. As it is cooling, stir gently a couple of times to knock out some of the air bubbles (not essential as you are using it in a cake) that will arise in pureeing.
You could grind some ordinary sugar for buttercream but it might be a bit gritty so if you are trying to impress this is not the best way to go.0 -
