Hi,
I have just been diagnosed as coeliac and having been a long term vegan I am desperate to find some really good recipes to take the place of others that I am now unable to eat.
As it is my daughters 18th birthday on saturday I would really like to find a chocolate cake recipe so I can celebrate with her (she too is a vegan).
I know I can rely on you guys to come up with some great recipes so it's over to you. Thank-you all in anticipation.:T

Thanks Pink, I will have a look x
Is there anyone else on MSE that has the same problem; vegan and gluten free?0 -
Hiya, i have an amazing vegan 'chocloate' cake recipe, i think you could make it gluten free using specialised flour. I haven't made it myself but my sister has and said it worked well.
115g sugar
4tsp cocoa/carob powder
1/2tsp salt
170g flour
1/4 tsp baking soda
90ml vegeatble oil
1 tsp vanilla essence
2 tsp cider/wine vinegar
200ml cold water
1. Mix thoroughly the sugar, cocoa/carob, salt, flour and baking soda.
2. Add the oil, vanilla and vinegar and then pour the cold water over the mixture.
3. Combine it all well with a fork, DO NOT BEAT
4. Pour into two sandwich tins and bake on 180 or gas mark 4 for 30 minutes, leave to cool.
I like to make a soya marg and sugar filling and sometimes put in some black cherrys / jam.

I have just brought some specialist gluten free flour so I am going to give this a go; I will do one gluten free and one with normal w/m and white flour.
Thanks so much for taking the time to post this for me, I will let you know how it goes x0 -
A couple of things
- Doves Farm flours are very very good.
- Phil Vickery has heaps of gluten free recipies, and has a great cook book too
- be wary of supermarket gluten free products - I find them mostly quite yucky and expensive so tend to make my own treats. I'm also very sceptical of 'bread' that can have a 6 month shelf life!
- Genius bread is great, but expensive. It freezes well, although I don't know if it's vegan
- I gave up trying to find subsitutes (ie bread, pasta) and just changed my diet to exclude them.
There's loads of tips on the forums, so have a rummage.0 -
Thank-you Little Vics x
I don't buy processed food so I won't have to change the volume of home cooking that I do so that's a good thing. I will certainly look up Phil's book. I agree with you on the finding substitute thing, I found that when I went vegan that all the sustitutes were full of other stuff that I won't eat, soya particularly so my diet is full of vegetables and fruit, soups and stews (need to find a good dumpling recipe now!) and very big salads as I like quite a high raw diet; it's mostly those little treats and christmas is going to take a bit of thought.
Thanks again x0 -
ooh dumplings are easy with Doves farm flour. The mixture doesn't get sticky and you get amazing dumplings....0

I think that's what I am going to have on Sunday; stew and dumplings...delish!0

I'm vegan and my housemate is veggie and gluten-free so between us we usually come up with plenty of nice things.
The best cookbook i've found for multiple allergy sufferers (or vegans with allergies) is The Food Allergy Survival Guide .
Some lovely recipes in there for gluten-free vegan baked goods like muffins and chocolate brownies (insanely good).
Also, there is an online community for veggies and vegans who are celiac called http://www.vegiac.com/ Quite useful for meal ideas.
Food-wise here's some quick ideas:
Chickpea and vegetable cassoulet with herby quinoa
Three bean and chocolate chilli served with rice, corn tortillas (the crisps not the wraps), homemade guacamole, homemade gluten-free vegan cornbread (i'll post the recipe if you want it) and cashew sour cream.
Left-over chilli and fixin's in gluten free wraps
Many vegetable curry (chickpea and spinach is a favourite but anything works), served with rice and poppadoms (most are gluten free).
Spaghetti bolognaise - corn/rice pasta with TVP mince made up into a spicy, rich sauce
Homemade veggie or bean burgers (use g/f flour or chickpea flour to bind), spicy potato wedges and baked beans.
Tofu or tempeh marinated and grilled in something yummy (many sauce ideas) and served with potatoes and veggies.
Hummus and salad/roasted veg on g/f bread or crackers
Hope they help a bit!0 -
Hi twinkle_star,
Thanks for all the ideas and that's a big yes please to the recipe. I will definately look up the website and will order the book when the next pay check comes through!
I don't eat soy either so the book will be great as alot of vegan books have masses of tofu/soy recipes.
Thanks again x0
