Made redundant with no pay for last few months, and no chance of pay.

I would be grateful for any advice.
I was made redundant from my job on Friday.
My employer says he cannot pay my wages owing since August, redundancy or holiday pay.
Obviously this leaves me in dire straits.
He has continually promised to pay me, until Friday when he said he can't.
He says I will get it eventually.
I know he is very ill and he says his daughter is going to move to the area and take over the company.
My colleague who is also owed money is not going to pursue it, she can afford the loss, but I can't.
ACAS have advised me to ask for my pay in writing; will sending a letter by recorded delivery be enough?
Do I write separately to both company directors?
I don't want to hassle him when he is ill, but I know I only have 3 months to claim redundancy pay.
Also, how can I get my back pay of about £2200? Will a court judgement compel him to pay?
