Trying to redirect email via 1and1domain to paid gmail account

I have a domain name regisitered with 1and1 and am trying to set up a gmail business account so that my business emails go out as xyzcompany.co.uk rather than having a gmail name
It has asked me to create a new CNAME for the xyzcompany.co.uk domain giving us a long code.
When that has been done, it says to point the CNAME record at google.com
I can see how to do the second bit, but not the first.
Can anybody else who uses 1and1 tell me where to go and what to do to get my email redirecting properly please?

The CNAME (which I guess is being used to catch MX traffic) will only deal with INBOUND messages. When someone sends mail to <any.body>@yourdomain.co.uk - DNS will steer it off to GMAIL.
To make it appear that it is coming from yourdomain.co.uk, rather than gmail, you'd need to set the envelope sender on the OUTBOUND leg. Just how you do that with a GMAIL business account (or even if you can) is not something I can help with - but hopefully there will be a control panel/option to set it somewhere in gmail? It may be as simple as changing your client settings 'from' field (if you are not using their webmail interface).

Configuring Your MX Records: 1&1- Log in to your account at https://admin.1and1.com.
- If it's not already selected, click the Administration tab.
- Under Basic Settings, click Domains.
- Select the check box next to the domain that you will be using with Google Apps.
- From the DNS drop-down menu, select Edit DNS Settings.
- Under Advanced DNS Settings, select the Other mail server radio button.
- Delete any existing MX records.
- Enter the following information:
- 1&1 Header - Mail Server - Priority
- MX 1 / Prio - ASPMX.L.GOOGLE.COM - 1
- MX 2 / Prio - ALT1.ASPMX.L.GOOGLE.COM - 5
- Further backups - My mail exchanger - [N/A]
- MX 3 / Prio - ALT2.ASPMX.L.GOOGLE.COM - 5
- MX 4 / Prio - ASPMX2.GOOGLEMAIL.COM - 10
- Click OK.

to send via google (using your domain name) it's as simple as going to the "settings" tab in your Gmail apps page
then go to "accounts"
then click "Add another email address you own"
and follow the instructions. you can now send using your domain name via gmail apps site.Laters

Did what Solitaire suggested in post 3 and also found this:
Creating Your CNAME Record: 1and1- Log in to your account at https://admin.1and1.com
- If it's not already selected, click the Administration tab.
- Click Domains. The Domain Overview page appears.
- From the New drop-down menu, select Create Subdomain. (If you've already created a subdomain for your website's address, skip to step six.)
- For domain verification: Enter the unique string that is available in your control panel.
For custom URLs: Enter the prefix of the address that you picked in your Google Apps control panel, and click OK. (For example, if you chose urban.mydomain.com for your custom address, you should enter urban here.) - Select the checkbox next to the subdomain. (Example: urban.mydomain.com)
- From the DNS menu, select Edit DNS Settings.
- Click the radio button next to CNAME.
- Next to Alias, enter google.com for domain verification or ghs.google.com for a custom URL.
- Click OK.
