    I used to make these in pineapple tins, the size that holds four rings. Makes a wide flat cake, good for icing.

    But definately, line them. Otherwise you will end up opening the can at the other end.!

    I used to wrap them in foil and keep them until about 7 - 10 days or so before needed then put a layer of marzipan on, let it dry out then spread some fairly thick icing over the top and sides, then went over it making it into `peaks`. Stuck a Christmas tree /santa / or whatever on top and put a piece of red ribbon around the middle. Just whatever takes your fancy really.

    What a great idea - I didn't even know you could use old bean tins.....
    same here... I love Christmas cake and this would be such a great idea for xmas pressies. Bet they look really cute in a hamper/basket..

    Oh this is a fantastic thread, what a brilliant idea!

    Is there any reason you couldn't make them in muffin tins with paper muffin cases in? That would be so much easier.

    Might work in muffin tins.I don`t know .........I made mine so long ago (over 30yrs ago) that muffin tins weren`t around - at least not in my kitchen.;) Nice to know that old things and ideas are still working and appreciated.

    Edit - I STILL don`t have a muffin tin !!!

    I make mine slightly differently. I bake a 8" square cake then when ready for marzipaning I carefully cut it into small squares, or even little oblongs.

  • What a brilliant thread.I am looking forward to making some this year as some gifts.I have several friends who like me live alone and find that a big cake lasts too long and dries out.These sound ideal.Now I am going to scour my cupboard for small tins. Well done for starting this thread it has given us all inspiration .In M&S yeasterday they wanted £22.00 for a very basic looking cake I have lots of decorations in a tin from years ago that I can use to brighten them up. Cheers everyone.
