I teach Food Technology ( DOmestic Science) and I make Pizza from scratch. Scone based dough then various toppings that they have to slice, chop and grate before adding.

It does open your eyes when they say things like 'why can't I get the knife through the peach' when we made smoothies, they never realised there was a stone in there lol Same thing happened when they saw a carrot with it's leaves on, the ones they were used to were sliced in a tin!

    Evening all.
I would like to make mini christmas cakes in bean tins (washed out of course) but I would really like an idiot proof recipe including cooking times. I am rubbish at cooking so be kind.:o

Crikey, that brings back memories. I used to make them when my kids were in primary school for Christmas fayres. They always sold like hot cakes (sorry :D ) as they are just big enough for people on their own or couples who don`t want big cakes.
I sometimes made small square ones as well by making one large square one and carefully cutting it into smaller squares then icing them.

  • Oooo they sound good, might have a wee try at making those myself, although my icing skills leave a lot to be desired.

just thought i say that last year i made mini cakes using stainless steel ice cream/sundae dishes, the one you might get a scoop of icecream in.
i find you can pick them up in charity shops.

last year i had mix over,so greased and put a little disc of baking paper in the bottom, filled nearly full and baked (sorry can't remember times) these
    are 3 1/2 in wide

then from my local cake decorating shop brought thin circular mini silver cake boards (approx 5 or 6in wide),then covered then cool cake with a thin layer of mazipan, made up royal icing ( i believe you can buy it in the supermarkets in a box like ordinary icing sugarif you want a quick option)

then i covered with the icing and just peaked it all over and put a sprig of plastic holly on.
my kids helped and when all dry we enclosed them in a clear cellophane bag and tied the top with some ribbon and you could add gift labels.

they looked like mini christmas puddings/snowballs even and everyone was impressed and made great gifts, unfortunately didn't take any pics

Years ago, I used to get Woman's Weekly for the knitting/craft/cookery ideas.

One year (about 1975/6) there was a 'Christmas Fayre' pullout leaflet that included mini christmas cakes - suggestions were 'baked bean tins' including that really mini size AND the family size that I haven't seen for absolutely yonks!

I know I had this leaflet (and many others) up until about 20yrs ago - but it went missing when Mr Ollie and I split up - think he dumped much of my 'cookery/crafty' stuff on me at the time .

I have recipe/instructions for exactly this, and know that they work because I cooked about 2 dozen when I was helping to run a Guide unit (the girls had fun decorating them). My typing is very slow, but I will return although possibly not until tomorrow.

Would you believe that when I asked for small clean baked bean tins to be sent in, one mother sent tuna cans

    Tut Tut! Some people, eh!

Fab idea for the cakes though.....lovely little gifts. Thanks Addiscomber

I am going to have a go at these cakes this year..... I normally make chocs and mince pies for the neighbours, friends and teachers but this year I felt the need for something different.

does anyone know if this will work with xmas puddings? Anyone tried it?

I've got one of those 12x12 (or it might be 10x10!) square tins with moveable dividers so you just make mix for the whole tin and using the dividers, I can get 8 small cakes - I could get 12 even smaller ones if i buy more dividers....................... but you can also make a large square cake and cut it up into smaller squares before icing. :)

Just made the baked bean tin Xmas cakes! They smell and look fab, not sure on the taste; I am resisting the temptation to eat them :D.

Do I ice them now and store or do I store and then ice at Christmas?
