    i bought a cabbage at the local farm shop for 50p and a cauliflower for 59p in mr t so mooched in my fridge and found some 'cheese', apples, onions, chillis, beetroots, potatoes, carrots, garlic, a marrow which was donated to me, flat leaf parsley and sage (both reduced to 35p) . Sushi rice, herbs and chopped tomatoes in the cupboard along with some millet and i have come up with the following:

    stuffed cabbage rolls with tomato sauce, which i will serve with roasted beetroot and apple with a green salad;

    marrow,tomato and 'cheese' bake which i will serve with garlic and herb potato bake

    marrow soup which i will serve with hm roasted onion muffins;

    braised cabbage with rice and red beans served with cranberry sauce (but that is better made on the day)

    cannellini beans with lemon and olive oil served with millet mash.....

    that should take us to the end of the week as the kids are out tonight so its only dh & i...likelyhood is we will just have a munch on whatever is about....use up whatever may be lurking in the fridge!!:o:D So, apart from the 1.09 spent on the cauli and cabbage, that is at least 5 days food sorted for what is in my cupboards.....if i can carry that on, i can put all the extra from the food budget into my mortgage monster!!:j Woohoo!!!!:T:T

    it is pretty addictive this...i am really hoping that i can reach my goals earlier than my target....i know its a lot of hard work but i am convinced that with all the support on here and with our family behind us, we will be relaxing in the italian sun sooner than even i can hope!!:D

  • I am very excited!!!!_party_ I have spent some time sorting my budget, talking to the family and getting organised and we have decided that paying off the mortgage in 5 years is ultimately do-able!!!!:j:j:j It will be a huge commitment....I need to overpay by £750 every month so it really is going to be a challenge, but I am up for it....MFi5 here we come!!!!!:T:T

    I emptied my coppers mortgage pig on Friday, so now have £18 to add to the fund....still a long way to go, but I am getting there!!! Have given the kids the whole lecture on what and why we are doing this, they are very supportive and are coming up with ways to make the money stretch further.....bless them!!

    Cleaned the house yesterday, totally knackered today though!!:o Am away with two of the kids for a week from tomorrow and wanted to get it in a reasonable state so that the two family members left behind will feel guilty if they mess it up!!:rotfl: Must admit, all this organisation is scaring me....not used to it at all..:eek:

    Anyhoo, off to update siggy and sort out my wardrobe ready for the new lot of clothing which my lovely sis will donate to me for my new job....:D :wave:

  • Hi I am going to love yours. If you could regularly post your dinner up I'd be very grateful it is so nice to get ideas otherwise mealtime is soo boring...
    Best of luck with the the big mortgage pay off, ours is 10 years but I'd like rid of it in 6, not sure how possible this is.
    Debt Sept 2012 £140,000 end age 65.5 (maximum) four mortgages in total
    April 2016 £114,599.83 (3 mortgages now)
    Nil debt for some many years now perhaps 8. Need to save for a tent for holiday this year but nil else.
    Over paying about £500 per month but fancy £600 so will have to think of some very money saving techniques...
