    You can have pasta as a pudding - make an apple sauce, mix with cooked pasta, cover with breadcrumbs and bake til crunchy on top. Lovely!
    Potatoes are only £4 a sack, now they are just as versatile as pasta AND cheap!
    Pasta with oil garlic and chilli is nice too;)

  • Cook 350gm pasta in salted water

    Heat knob of butter in frying pan and add chopped onion and 3-4 cubed chicken breasts until almost cooked, add 1 crushed garlic clove. Add 200ml chicken stock and boil till reduced by half, stir in 1tbsp wholegrain mustard (I use 2 tsp English), 2-3 tsp dried mint and 200ml crème fraiche.

    Stir into pasta and serve.

    You dont have to eat pasta for the rest of the year to eat cheapily:D Some of the ingredients needed to make different recipes will still be quite expensive. Do you have a freezer? You could bulk cook and freeze things like: chillies, curries, stews, shepards pies, fishpies...all very very cheapily;)

    I have a freezer, but I have no microwave :rolleyes: to defrost things.

    I froze some parsley leaves last night though to add to soups.

    Would anybody know of pasta recepies containing peppers, or smoked paprika, or aubergines, please?

    My favourite is pasta pesto

    Easiest cook!

    chop one pepper (per person) into quarters and place under the grill, skin side up, medium heat, what you will see happen is that the skin will burn black - don't worry about this! As after the skin will peel off beautifully and the pepper will taste great!!

    Boil pasta, place spinach (uncooked) into seive, when pasta is boiled drain, this will cook the spinach. Add back to bowl, add pesto, mix and put on plate, place the quarters around the plate, looks and tastes great! I then add cheese!

    (of course if you wanted to spend more time you could could fry some onion and garlic but I'm all about few ingredients and getting there quick!!)

    Good luck on eating pasta till christmas! I eat it twice or three times a week and that is enough! Maybe try shepherds pie, the easiest and Cheapest thing I've found for this being a veggie is that you can get beanfeast for shepherd pie in asda for about 50p, you add water, baked beans if you like, and then potato and cheese! Definitely much cheaper than a meat version and OH (non-veggie) thinks it tastes great!!

    I hardly ever use the microwave to defrost. I get the dish out of the freezer about 24 hours before and put it in the TOP shelf of the fridge (bit warmer there so more likely to defrost).

    If I forget then I take it out and leave it in the room for a couple of hours to defrost it. Usually works :D

    You don't need a microwave to defrost!!! Just leave the dish in the fridge/on the worktop until it has defrosted. Personally I hate using the microwave to defrost things, and why use electricity when you can do it for free?
  • I'm with Heth, I never defrost things in the microwave, I take out dinner the night before and leave on the worktop. Before I go to work, I pop it in the fridge.

    If I forget the night before, I leave it out on the worktop while I'm at work.

    Pasta with aubergine and tomatoes

    This recipe was featured on BBC programme Honey, We're Killing the Kids

    Ingredients

    2 large aubergines
    1 clove garlic, finely chopped
    Oil
    400g can chopped tomatoes
    3 tbsp basil
    salt and pepper
    300g pasta

    1. Cut the aubergine into cubes

    2. Heat oil in pan, when hot add aubergines and cook until golden brown. Remove aubergines from the pan and place in a bowl

    3. Heat oil in a saucepan over a medium heat. Add garlic and gently fry, then add chopped tomatoes and aubergine and stir well

    4. Add the basil and seasoning and simmer well on a low heat for 20 minutes

    5. Cook the pasta as per instructions on the packet

    6. Drain the pasta and place back into the same saucepan, add the aubergine sauce to the pasta, stir well and serve immediately

    what about making a simple soup (perhaps vegetable) adn adding pasta shells into it?
