What to do with polytunnel on allotment?

We have had our allotment for about 3 months now and my husband has just put up a polytunnel. I know this may seem mad, but I just not sure what to put in there. I know I can do seeds in the spring but would love to know what other people use theirs for. The only thing I can think of is to over winter my hardy fuschias in there. Please help I want to put it to good use. We live in the South/East if this is any help.

I don't have a poly tunnel, would love one
Leafing lettuce, the cut & come again type
Oriental veg, such as Pak Choi, the shorter day lengths slow them down from runing to seed
Fresh fairly hardy herbs? Like mint [in a pot not in the ground or you will never get rid of it]
Early bulbs in pots for the house later, like Tete a Tete daffs, or hyacinths
