I'd have to agree with coxy17, A 775 Core 2 would be fine, chuck in 4 gigs of ram and a Cheapish motherboard, I feel most of it is down to personal preference though? Especially what you feel you need HDD and optical drive wise.
£1000 definetely seems like alot though as you don't intend to use it for gaming0
