The last time I had leftover lamb, I just heated it up in gravy, put some mash on top and made a kind of shepherds pie.

Now that I have a little stock of herbs and spices, can I make a very simple curry?

I have cumin powder and ground tumeric (haven't got much further than that).

I've also got mixed herbs and rosemary, but that's about it when it comes to spices and herbs.

    INGREDIENTS:
    • 1 cup chopped onion, about 1 large onion
    • 2 tablespoons oil
    • 1/2 cup tomato sauce
    • 1/2 cup water
    • 1 tablespoon brown sugar
    • 1 tablespoon vinegar
    • 1/2 teaspoon salt
    • 1/8 teaspoon ground black pepper
    • dash ground cayenne pepper
    • 2 cups cubed roast leftover lamb
    PREPARATION:
Sauté onion in skillet over medium heat in oil until softened. Add tomato sauce, water, brown sugar, vinegar, salt, and black and cayenne peppers. Cook mixture over medium heat for 5 minutes. Add leftover lamb; cover and simmer for 15 to 20 minutes.

Found the above for myself on another website.

The only ingredient I don't have is the cayenne pepper. Is this an important ingredient, do you think?

Plus, how do you convert from a cup to normal measures?

Cheers, does anyone know the point about cayenne pepper? Plus, when they say tomato sauce, is ketchup okay?

Cayenne pepper will give it its heat, so it won't be very spicy wiithout it. You could always add something else for a different flavour - cumin would be fine, as you already have it. I'm sure ketchup is fine - maybe mix in a bit of puree too?

Thank you very much. Might add some cumin or mild chilli powder (got some of that too). Am gradually upping my stocks of spices, next on the list are coriander and cayenne!

I did, yep, and it was quite yum actually.

I used ketchup mixed with tomato puree and actually went out and bought cayenne pepper. Was a bit liberal with it though!

Bf saw what I was putting in the pan, i.e. sugar, ketchup, vinegar, and got a little scared. Started muttering about going down the chippie!
