Old outstanding insurance claim causing renewal issues

Not so much of the mature please lol

Well unfortunately I had a flood claim in 2008, and my husband had his first ever speeding points in 2007 (I was not happy with him!), so both of those always go against us (we are both named drivers on the policy). Not sure how a 3rd claim would affect this but not much we can do.
Usually ends up around the £300 mark, minus whatever quidco is available. Think our last years' insurance was around £260 all in.
Feel a bit uncomfortable going down the route you suggest as if the worst happened, and we had to make a claim during those first few days, the only documentation I currently hold says I only have the 2 years' NCB. Even it is hopefully unlikely that any incident would occur, it would be just typical if something did.
So think I'll have to go the opposite route, and get cheapest quote for the 2 years' NCB, but check they will amend to 7 once sorted out.

I wouldn't worry about the speeding ticket so much. 2007 was pretty much the height of speed camera mania in the UK and so many perfectly safe drivers got them that the majority of insurers don't load the policy for one speeding ticket, or load it by a few quid at most.
Good luck with your renewal.0
