Ideas for minced chicken?

I am trying to spend less, and have pulled some minced chicken out of the freezer for tonight's dinner. Any ideas what I can do with it? I have looked for recipes and can't find a thread anywhere. Please feel free to move this if there is one out there.
I normally make rissole type things with a green olive in the middle of each, and serve with a nice lemony sauce, but I would love to make something different.

It's not something I use so I don't have any suggestions, but this thread on what to do with turkey mince might has lots of ideas and might give you some inspiration:

I would use it the same as I might any other mince, with maybe different spices or herbs.
Chicken meat balls - in either a gravy or tomato sauce?
Chicken burgers - you could go thai flavours if you like them?
Chicken enchiladas
Chicken Lasagne - you could do a tomatoe sauce or maybe a white one with broccali or somthing?
chicken canilloni
etc.....

I'd say meatballs then - I make mine up,brown them off, then bake them in thier sauce till dinner, I prefer a gravy, but a tomato sauce would work very well too

I've just bought some turkey mince and the recipes I had in mind for it are 'korean keema' (basically cooked with chilli pasta,rice wine, ginger, garlic a, soy and peas!), turkey and sweetcorn meatballs and thai flavoured burgersPeople seem not to see that their opinion of the world is also a confession of character.

Mmmmm! Chicken and sweetcorn meatballs sound lovely. I found a recipe on the turkey mince thread for keema(Indian type), so i think that will do for today as I have all the ingredients for it.
Now just have to look for a recipe for chocolate and banana muffins if it is possible to make such a thing! I'm sure there will be a recipe somewhere.Father Ted: Now concentrate this time, Dougal. These

Thanks Pink-winged for the idea to make banana muffins and mix chocolate in with them. Mind you, what I'm really after is a chocolate muffin recipe with banana. Do you think I can make banana muffins and put cocoa powder in the mix?

I cant help with what to make but was wondering where you got the chicken mince from? I have looked everywhere (bar the local butchers which is next on my list).
Sadly I cant make my own as I dont have the right attachment for my kenwood machine.
