Desperately trying to 'use stuff up' rather than buy anything new before we move house & have unearthed some sushi rice from the depths of the cupboard...I don't want to spend more money on fish & seaweed - has anyone ever used sushi rice for anything other than sushi? Am thinking a risotto maybe, but any other ideas are welcome please!

There was a previous discussion about subbing different types of rice for risotto - here . Also there is a very old thread with only a few replies about sushi rice here but it may help

You could make domburi (aka "stuff on rice" when my husband and i are talking about it)...prepare and season your rice as if to roll up, but put in bowls whilst warm, and top with vegetables or meat quickly stirfried. Sprinkle with some toasted seeds (sesame for preference, but I bet others would work). Or press firmly into balls/shapes, and eat instead of sandwiches, as Japanese people do in their bento boxes (again, a sprinkle of seeds/shiso is nice here)...0

I love sushi rice as an alternative to regular rice, in my bento boxes. You could make chirashi ("scattered sushi") which is a rice bowl with a cold topping, like this: https://www.101cookbooks.com/archives/sushi-bowl-recipe.html (you can leave out the seaweed if you don't have any) or cook it then leave it to cool and stirfry it.
