The Man in Seat 61 is usually very good but the information for Cyprus doesn't give the complete picture. I've lived here for 4 years and drove from London using a ferry/cruise ship that no longer exists.
The chances of finding a one-off sailing that would match with the dates needed are virtually nil.
Driving to Turkey, taking a ferry into TRNC and then crossing over to the Republic of Cyprus for the wedding is an option but it is a *really* long drive; from northern europe all the way to Istanbul and then down most of the west coast of Turkey to pick up the ferry.
The Grimaldi Freighter option is possible; I know of people who have brought their car over that way. It's 12 days from Southampton to Limassol, and 7 days (not 4 as stated) from Salerno. Grimaldi's schedule is here.
The final option is the much discussed and anticipated reintroduction of a ferry service between Greece and Cyprus. The plan is for the ferry to run from Lavrio in southern Greece into Limassol. The bad news is that since this was announced back in June there seems to have been no progress.
From your signature it looks like you've got a year 'til the wedding? Holding out for the ferry seems like your best bet (bearing in mind it'd still be a really long trek for your mum to get as far as Greece in the first place) if she's set her heart on finding a way.
