Try this recipe from the Vegetarian Cookery School in Bath (which also does good short courses) http://www.vegetariancookeryschool.com/recipes/christmas/shallot__calvados_gravy0

Just a very quick question - made my gravy yesterday but it needs a bit of colour and is quite sweet - carrots - I think. What can I add to give it some colour and tone down the sweetness. It is seasoned enough so I have discounted soy sauce and marmite. Any ideas?I must not fear. Fear is the mind-killer.
Fear is the little-death that brings total obliteration.
I will face my fear. I will permit it to pass over and through me. When it has gone past I will turn the inner eye to see its path.
When the fear has gone there will be nothing. Only I will remain.0 -
Hi Molly I wonder if some Bovril would help with the sweetness and you could try some liquid Gravy Browning to darken it down to the colour you want? Lyn xxx.0

Recent inovation from Bisto: Bisto Best Beef Gravy Granules. If no fat juices from a joint, just add one Oxo stock cube per 4 servings & you have delicious gravy! Every Sunday, my son-in-law only comes to dinner for the roasters......& the gravy!0

I've made this gravy:
http://www.bbcgoodfood.com/recipes/890639/makeahead-gravy
It is rank! I have left it sitting, unsieved hoping the flavour improves as it sits. It just tastes of the vinegar and marmite. I used veggie stock as I want it to be vegetarian.
Any ideas/recipes please?
Make vegetarian gravy using flour (cornflour easier and less prone to lumps) with a bit of oil, sauteed finely chopped onions, or chopped mushrooms and vegetable stock (marigold powder or cube). To brown the gravy add a good shot of soy sauce to the sauteeing onions. HTHFinally I'm an OAP and can travel free (in London at least!).0
