I am selling one item, an ebook £10 buy it now, and I sell 1 or 2 a week. Would it be worth me getting a shop? When the item sells I always have four or more watchers, and I lose them when the item sells.

Probably not worth it as a shop will cost you £6 a month on top of listing fees.
Why don't you just use a multiple BIN it should be cheaper? Also watchers do not necessarily convert into sales, they might be watching to see if it is worth copying your idea and selling it themselves.

Soo
soolin, you seem to be knowledgable about ebay, what is the benefit for the seller of opening an ebay shop? so you pay £6 per month but still have to pay the same for each listing? what do you get for your £6?0 -

The fee structure is different and is for sure cheaper to list in the shop. However the FVF in a shop are now like 10% wheres for a normal listing it is less than 6%.
Its not the best of times for having a shop for small sellers. I have a shop myself but don't list in it. I sell a lot and I like to look professional and have a place where customers can browse my listings with ease

They do but only right at the end of auction listings. That is of course fine if you are selling a unique item as your shop items will still be on the front page, but if you are selling something common your shop items will only ever be several pages back.
Most people selling common items in their shop will also have normal auctions running so that when people look at the normal auctions they can also see that the seller has a shop and could browse there as well.
The fee structure is here:

As the OP is only selling 1 or 2 items a week it would not make sense to have a shop.
