Good afternoon, a post-cheese roll, Pringles, caramel cupcake and yoghourt with apple curd type bump, all washed down with a mug of coffee. Piddling down outside, have shopping to put away, finances to sort out then off to the library to take books back. If I'm in a good mood I will take the car and haunt the bus stop to give DS a lift home when the school bus gets in. If not, he can get wet. Still raining here. Tixy, my caramel cupcake was from the local bakery and very nice too! The apple curd was an experiment from Weezl's website on cheap family meals. She gives a month's worth of recipes for a family of 4 which come to about £100 total, and one of the recipes was apple curd. It's 1kg Bramley apples, chopped, cores taken out but not peeled. Put in a pan with 150gms sugar, 120mls oil and 3 tablespoons water. Cook till soft, put through a sieve and then put in sterilised jars. Keep in fridge. Spread it on toast or stir into yoghourt. Probably be good as a cake filling or layered with ice cream as well. That was the first time I have made it, and it has turned out ok.One life - your life - live it!0
