Want to make up a hamper that includes items used/eaten at christmas dinner. So far have got or had idea of
goose fat (for roast potatoes)
chocolate biscuits (already bought)
xmas crackers
Bottle of bubbly - perhaps?
and then I'm getting stuck.

make sure that the people you are doing it for know! Things like fat, Xmas crackers etc they will buy in advance if they don't know you are getting it for them!
If you are going to be opening it quickly then cheese, biscuits & port would be nice.
A bottle of baileys (my fave)
Little pots of gold
Nuts
Marsipan stuff0 -

I think the Hamper should contain stuff that the recipient would not normally buy. Specialist foods such as HM fudge, Jams and Curds. Unusual sauces or desserts (obviously food stuff that will keep for a period of time).0

My mum did one for me one year for Christmas tea. She put in cheese and crackers, a small bottle of port, some chutney, some nuts, a pack of coffee and some nice tea. Some homemade mince pies and a box of chocs. Was lovely to snuggle up with on the sofa after the kids had gone to bed!0

Why not include some chutney to go with any left over meat/cheese. I'd go with homemade, farmshop or supermarket extra special.0
