I would like a receipe for a vegetarian meatloaf

I recently went to a hot finger buffet.
There was a fantastic vegetarian meatloaf. I didn't know the hostess very well and forgot to ask for the receipe.:o

I wonder if any of you have any receipes I could try out. :beer:

    225gm mature Cheddar cheese grated
    225gm Mushrooms finely chopped
    1 large onion finely chopped
    175gm breadcrumbs
    1 egg beaten
    mixed herbs
    40gm margarine
    salt & pepper

    Oven 170c 325f gas 3

    Fry the mushrooms and onions until soft
    mix the breadcrumbs, cheese, and herbs together. Add the mushrooms and the onions with the beaten egg. Mix well
    Spoon into a well greased dish or foil dishes or a loaf tin lined with parchment ( to make it easy to turn out) and bake until golden brown, about 25-30 minutes.

    Serve hot or cold,( I also slice it and use it in a sandwich) It's very tasty!!
    It freezes well too.

    Is it possible to make a vegetable loaf :confused: being the equivalent of a meat loaf?

    The Linda McCartney cook book does a lovely meatstyle vegi meatloaf,that's very tasty.I'll see if I can find it and post it later.

    Hi ,

    If you enter "vegetable terrine" in your search engine you should get a few hits that might be what you want.... I had one a while ago where you lined a loaf tin with cabbage leaves (hanging over the edge) and layered cooked vegetable in it - i.e. carrots, pepper, mushrooms tomatoes, cheese etc) then wrapped the leaves hanging out the tin over the top and weight down and put in fridge.... but that is a cold one....

    Hi Peeps :hello:


    Yesterday I made a savoury loaf, today, I made a mushroom loaf, very similar to a meat loaf, however, on both occasions it's stuck to the tin, even though I've greased the tin, where am I going wrong? :confused:
