Corfu Flights- Booking seperately to hotel

Hi there,
Do you any of you have any experience of booking your flights seperately to your hotel?
We normally do the package option but I am wondering if I can get it cheaper this way. We know our chosen hotel is £600 ish on its own (All Inclusive) but package is £1400 ish....
If anyone booked flights to Corfu last year in May- roughly how much were they per person? They look like being about 300-400 per person at the moment, which I think is a lot but I am wondering if there will be more flights advertised/available nearer the time which will be cheaper. Only problem is we don't want to gamble by booking seperately and end paying a fortune more! Any help appreciated.
