What to do with pie leftovers?

This afternoon I've made cheese, onion and potato pies (Nigella Lawson's Dometic Goddess book), however, I've got loads of filling leftover and no pastry left. The filling consists of 3 cheeses, parsley, partly cooked potatoes all bound together with creme fraiche.
Any ideas what I can do with the leftovers as I don't want to throw it away. Think it would freeze for use at a later date?
Also is it best to freeze the pies before baking or after? And if I freeze before cooking do I need to defrost them before putting in the oven?
I know questions, questions, questions.....
Thanks,
soba

Could you shape them into small sausage shapes, coat them in breadcrumbs and either fry or bake, like potato croquettes? I don't know if this would work as I don't know the recipie you mean, but based on the ingredients you have listed can't see why it wouldn't.

I agree with Nicki about the leftovers, although if none have been frozen previously, they should freeze okay for later pies

I always freeze pies before cooking, then put them in the oven from frozen. Obviously you have to give them a bit longer to cook. I find if I cook them then freeze them, the pastry tends to be a bit soggy
