Last week I was given a slice of the most delicious carrot cake I have ever had - very squishy with much too much creamy topping on - yum. I certainly shouldn't have eaten it, but I did. I yearn to make one myself, and have just looked in the OS recipe index. There is one in there but it seems to be made in a loaf tin (ie oblong) and what I need is an old-fashioned looking round one to take to a charity coffee thing next week. Could I make the OS recipe in a round tin just as it is, or would I have to adjust the quantities, and how long would I cook it for ? I am completely ignorant about adjusting recipes, tho can follow one if told what to do. Can anyone help me turn out a squishy round triumph ?

I'd go for it and use the recipe and put it in you round tin. Of course you'd have to do a trial run first, test for taste texture etc....:rotfl:0

I cant see a problem with using a round tin, i would seperate the mixture into 2 tins (like a sponge) because it does rise a lot, you could sandwich it together using some of the lovely squishy icing that you use on the top!!!!0

You could do it in a deeper round cake tin and just keep an eye on it for the last half hour of the cooking time to make sure its not ready earlier than a square one.Saving in my terramundi pot £2, £1 and 50p just for me! :j0

My deep 7" round cake tin is the equivalent, by volume, to a 2lb loaf tin or 2 x 1lb loaf tins.
You should have no problems using a round cake tin. Check that the cake is done by inserting a clean skewer or fine knitting needle. If it comes out of the cake clean, the cake is cooked.

Go to https://www.deliaonline.com and type carrot cake in the search box. Some gorgeous recipes there! Just put in a deep round cake tin and it should cook the same.
The foolproof way I always test if a cake is done, whether a small fairy or big sponge is to gently press the middle of it with a finger. If your finger leaves a dent it isn't done. If you can't see where you pressed then it is done.0 -
This is the one I have been using lately:225g (8oz) self raising flour
5ml (1tsp) baking powder
150g (5oz) light brown soft sugar
50g (2oz) walnuts, chopped
50g (2oz) raisins
100g (4oz) carrots, grated
2 ripe bananas, peeled and mashed
2 eggs
150 ml (1/4 pint) oil
65 ml (21/2 fl oz) freah double cream
50g (2oz) icing sugar, sifted
75g (30z) full fat soft cheese, softened
2.5 ml (1/2 tsp) vanilla essence
chopped walnuts to decorate
1: grease and base line a 2 litre (3 1/2 pint) ring mould ( I just use a round silcone baking form - you know the rubbery ones - but in the past I have also used just a round dish - I don't have a ring mould! )
2: Sift together flour and baking powder into a bowl and stir in sugar, making sure there are no lumps
3: Add nuts, raisins, carrots and bananas, stir to mix
4: Add eggs and oil, beat until well mixed
5:Pour into prepared mould and place on a low microwave rack (I just put it on the turntablevas normal) Cook, uncovered, for about 9 mins until surface is still slightly moist and a wooden cocktail stick, inserted in the cake, comes out clean. (This is based on a 700w microwave)
6:Stand for 5 mins, then turn out onto a wire cooling rack lined with non stick baking paper, strip off paper and allow to cool.
7: Whip cream until softly stiff.
8: Cream icing sugar, cheese and vanilla essence together. Fold in cream.
9: Spread over top of cake and sprinkle with walnuts.
Please note: this recipe contains bananas, which is a bit odd, and you can taste them a little in the finished cake, but it is very nice - I make one every weekend and my lot are dead fussy and they always polish it off very quickly.
The recipe does not ask you to add any spices, however I always add a very good dose of cinammon as it seems essential to me in a carrot cake - I also sprinkle cinammon on top of the topping.
I also have recipies which substitute the banana for a tin of crushed pineapple in juice, which sounds really yummy, but these do not specify cooking it in the micro, and I have not tried it, though I can't see it would make any difference really?
