    I do rice with salad and tuna in pitta breads.
    Or pasta, or soup.

    I get bored of sandwiches too. ;)

    When I make a veg chilli we use the leftovers the next day in wraps.
    Any leftover pasta or rice gets made into a salad for lunch the next day. The kids both take this to school as well.

  • Thanks everyone, some brilliant ideas there. I think I will start making a little bit extra dinner each night for my tupperware box. Also like the idea of wraps and naan breads to vary it if I must have a sarnie :)

    I've been stealing all the good ideas from the post, so thanks for starting it. I wouldnt worry about which board its on, its helpful and thats what counts the most.

    Saying that the OS board is THE place to be for fantastic recipe ideas, which are so inexpensive as well!

    I can't really add to any of the ideas that have already been posted. I love a cold sausage sandwich!
    Plus changing the bread can always make a difference, try a granary style, or maybe a deli sub, even tortillas and naan bread.

    Leftovers are always good, left in a fridge at work till lunch time rolls around. I also like leftover cold kebabs, chicken, peppers,onions etc, with a dollop of mayo :) I'd just like to add not that awful stuff that comes from a shop,homemade, so you know whats in it!

    I also have pitta bread filled with rice. Maybe cold chicken nuggets? Or a leftover cold chicken drumstick with rice. Or make your own sausage rolls. I tried my first attempt at the weekend and I wish I had made more. Theres also always cold pie, quiche etc, big helping of potato salad.......... yum!
    Not very calorie aware I know :)

  • That's the thing, it's tricky trying to combine budget with healthy options. Funny that isn't it, you'd think healthy should be cheaper (hello Jamie Oliver!!)

  • Me and my friend at work have a sort of picnic (in the canteen) each day.

    We get supplies once a week e.g wholemeal pittas, salad, cucumber, tomatoes and various dips. We split the cost and its healthy too!

    We also bring in anything that may contribute to our picnics that we had at home e.g left over quiche, cooked meat...

    When it gets a bit colder we will probably take turns in bringing in home made soups!

    Reading this back I sound like a domestic goddess which couldnt be further from the truth!!!

  • A warning note

    If you're like me, there will be the odd evening/morning where you really, genuinely, honestly don't have the time/energy to make a lunch for work. It's a good idea to keep a few emergency supplies in your desk for these days. If you have access to a microwave, I find tinned spag bol is a good cheap option (33p from Netto). Crispbreads and cheese spread also keep well without refridgeration. :) You can keep a couple of apples in your desk, too, so that you have a healthy snack to hand.....:D

    If there are two of your, make four portions of your evening meal. That's then lunch for the pair of you the next day, or you can freeze them to "shuffle" your lunches around.

    You do need a nuker at your workplace though.
