how do I cook a whole salmon side??

I've just bought a huge whole salmon side as it was reduced and judging by the size of it it will make quite a few meals! However, need some ideas about how to cook it as I've not tackled salmon this big before, only ever used fillets.

Had a look at some of the salmon recipes on here, but need advice on how long to cook it for, what temp etc. Thinking of doing it in tinfoil in the oven with butter, lemon juice and pepper - would this work or should I cut it up into smaller pieces?? Would this be ok if I was to use the remainder over the next few days in pasta, hotpots etc?

  • Ok does the package say suitable for home freezing?
    If yes, you could cut it into steaks and freeze individually and use as and when you wish (loads of recipes, just let us know what sort of flavours you like).

    Strange confession time - I don't know! I've only ever eaten salmon a handful of times in my life:o

    Can you freeze portions rather than making yourself use it all? That's what I would be inclined to do

    Does salmon fillets or whole salmon have any good ideas or specifics?

  • It doesnt say but its fresh salmon from Tesco, was reduced from the fish counter so not in a proper packet with instructions etc. I dont see why I couldnt freeze it i guess...

    Still not sure how long I should cook it for in the oven though even if I cut it smaller!
  • Ok I see you edited to say it needs cooked tonight.
    I see no reason not to cook it as you've described, although as presentation isn't an issue you could cut into smaller pieces which will reduce the cooking time.
    You could also cook each piece with different seasonings:butter, lemon and pepper; garlic, chili and soy sauce; teriyaki sauce etc so you have lots of flavours and it doesn't get boring over the next few days. You can freeze the meat once it's cooked though so you don't have to be eating salmon all week.

  • If you were to cut it into steaks (the same sort of size you'd buy for £1.75 at the fish counter) you could just pan fry. I do a stirfry with salmon and cook the salmon alongside the veg in a wok. One pan, easy to wash up ;).
    Personally I've found salmon in the oven a bit hit or miss, more often or not I've overcooked it so I can't advise on cooking times sorry.
