Recipe Challenge - Can you turn these into a biscuit/bar/slic using only a microwave?

    I looked for a fridge cake thread -this thread only had recipes with butter - and I've never made one so didn't know where to start! Was surprised there wasn't a bigger thread on it

  • Thanks guys but no swapping oil for butter doesn't work neither does coating rice krispies in golden syrup and refrigerating it.

    I'll just have to accept that it won't work unless anyone has any ideas that they have actually made and know work. You cannot just substitute liquid fat for hard fat in a recipe. Most times it won't work.

    got my thinking cap on and did some research on the net for you...

    Its quite possible to cook cakes in microwave (sorry, dont know, cant test as i dont have one after it blew itself up) and I think you would need to find a recipe suitable for vegans (no eggs or dairy products then)... there is a recipe for a microwave cake cooked in a mug, apparantly only takes 3-5 mins depending on strength of your microwave) but they all seem to have chocolate powder in to flavour - I reckon you COULD relace the chocolate powder with flour and then add coffee powder dissolved with a TINY bit of boiling water or vanilla essence instead and then look for a microwaveable caramel frosting recipe (loads of those on the net - 60 ml evaporated milk ½ tsp vanilla 250 g powdered sugar 200 g brown sugar
    Combine all ingredients in a saucepan and bring to a boil. Stir frequently until mixture starts to thicken. Remove from heat and leave to cool a little before frosting the cake or cookies.

    adapt to do in microwave at small short bursts of heat and stir lots - if you have a real sweet tooth craving you could just make the frosting and eat that by itself ;-)

  • vegan microwave cake in a mug recipe:

    4 Tablespoons Flour
    4 Tablespoons Sugar
    2 Tablespoons Cocoa powder (Note: don't use cocoa mix or quik, it shouldn't have any sugar)
    2 Tablepsoons Vegetable Oil (Don't use one with a strong flavor, eg olive, sesame, etc)
    2 Tablespoons Water
    Dash of salt
    Mug
    Microwave

    Add the sugar, flour, cocoa, and salt to the mug. Mix. Add the oil and water. Mix dry and wet ingredients together till you have no lumps. Microwave on full for 1-2 mins (should be gooey like a chocolate brownie in the middle)

    HAVENT TESTED THIS -PERHAPS SOMEONE ELSE COULD?
