Over wintering strawberries

can anyone tell me if you should trim strawberry plants down or just leave them to die back? (if they do)
Just leave them to die back, the shrivelled leaves will give some protection to the crowns overwinter
Come Spring and you notice new green shoots, remove all the old dead leaves and any other debris that has gathered [mine always seem to collect oak leaves for some reason].

dollparts - I wait until autumn and then trim back any dead/dying strawberry leaves as this removes the hiding places for slugs and wood lice. Apart from that, I just leave my plants to look after themselves over winter, which they invariably do, even through frosty periods.0
