The only information I have is from FIL's garden in France but the quinces there are golden when ripe - more yellow than a Golden Delicious apple. If you cut one in half and the pips are brown, then that's another sign it's ripe. FIL's are beginning to drop off the tree but are still incredibly hard to peel and very sour when poached, so texture and taste aren't much of a clue.
Basically, I'd cut a really yellow one in half and see what's going on inside.0 -
My quince tree fruit should be ready in October. OP, however may be talking about the little japanese quince on shrubs. If that is so, pick when they have turned orange.Please do not quote spam as this enables it to 'live on' once the spam post is removed.

If we are talking about Cydonia oblonga then a friend picks hers when they are a good size and good rich yellow colour, leaves them on the windowsill until they develop a cobwebby sort of down (honestly it is a bit weird to see it!) and a strong perfume.
If we are talking about Chaenomales - then when the fruit goes from green to yellow/orange as said before.
