Our tomatoes are finally ripe
Our tomatoes are finally ripe and after waiting and watching for what seems like ages, we have them in abundance.
Does anyone have any really tasty pasta sauce recipes that can be frozen ?
There are lots on the internet but it would be nice to hear from someone here.

Jamie Oliver's one for arrabiata is absolutely amazing!
I had black cherry ones and cherriettes of fire ones today and munched through them all in five mins! I think i prefer the black cherry!Feb GC: £200 Spent: £190.790 -
This sauce is the nicest I have ever tasted and it was very easy.
Plunge tomatoes into boiling water for a minute or so, then into cold and peel off the skins. Chop and put in a big pan with 1tsp sugar, some dried herbs to your taste (I used basil and thyme), 3 cloves garlic (grated) and simmer for about 45min-1hr. Add handful chopped parsley, salt and black pepper to taste and either leave lumpy, or blitz until smooth. Perfect for pasta, pizza, or to use with aubergine, courgette etc in oven. Add the salt at the end, otherwise you will draw lots of water out of the tomatoes and be cooking for a lot longer.
This keeps very nicely for quite a few days in a screw-top jar in the fridge, and freezes beautifully.Father Ted: Now concentrate this time, Dougal. These
(he points to some plastic cows on the table) are very small; those (pointing at some cows out of the window) are far away...
