My wife can't eat vinegar -is it possible to make chutney without using vinegar ?

i'd struggle to make chutney without vinegar
but you can make things like onion marmalde, salsa type dishes, or caramelised onions etc without using vinegar that will keep
i "seal" things like this (that havent been boiled with vinegar" by pouring a small but complete "disk" of olive oil over them once cooked & potted
when i open the jar, stir the oil in, and keep in the fridge0 -

I don't think there is a substitute, but you could try cider vinegar.0
