chocolate yule log recipe with real chocolate NOT cocoa powder please anyone?

Hi there,

The title says it all really, but I'd be very grateful to know if anyone has successfully made a yule log without cocoa powder, only real chocolate.

  • I would have imagined it would be difficult to do because of the texture you need for the sponge, to be able to roll it properly, and after a lot of searching through my recipes I found one, it's hand written and not by me, so I'm not sure where it came from.

    2 eggs
    1 1/2oz flour
    2 oz cater sugar
    1 tspn baking powder
    1 tbspn warm water
    1 oz finely grated chocolate

    Grease a swiss roll tin, line with greaseproof paper and then grease the paper well.
    Separate the whites from the yolks of the eggs.
    Beat the yolks and the sugar together until the mixture is creamy and thick.
    Then add the warm water, and immediately after that the chocolate.
    Whisk the whites stiffly, and add alternately with the sieved flour and baking powder, folding them in lightly.
    Put the mixture in the tin and bake in hot oven for about 12 minutes.
    Turn out on to a piece of greaseproof paper well sprinkled with icing sugar, and fill with your choice of filling and roll.
    Cool.

    There is no recipe for filling but I would imagine a light chocolate buttercream would do, I'm sure you could come up with your own. :D

    but with whipped cream as the filling.

    It worked very well!

    Mrs E you are right it is a very early start! but i have some lovely testers waiting to start it very soon so i need to be ready for them :)
