Why won't they allow me to change my name ???

Anyone can be known by whatever name they like but if they want to legally change it then they have to do so by marriage or deed.
A Nurse is considered a legal profession and requires a registration and a CRB check done, even in training, and authorities are careful to check that people are who they say they are.
You will find that you cannot change your name on your passport without a deed.
You will also be able to use the deed to change your name on your Nursing course.0
